Yields: 1 wrap

Ingredients

  • Large spinach wraps
  • Favourite sandwich filling
  • Sliced cheddar cheese and/or nori (seaweed wraps), for hair and mouth

Cut remaining half into long strips for mouth. Cut smallest cornichons in half lengthwise for eyebrows. Cut a thin slice for nose. Place olive slices for eyes.
  • Use toothpicks to secure 2 olives or cornichons to sides of wrap for Frankenstein’s bolts.

Healthy Halloween nachos

These healthy nachos with a frightful twist are simple to make and will be a popular snack at your next Halloween party. To mix up the nacho shapes, use any Halloween cookie cutter such as ghosts, pumpkins and skulls to get a ghoulish selection of chips to dip into your delicious homemade salsa and guacamole!

Yields: 4-6 servings

Ingredients

For the guacamole

  • 2 limes, juiced
  • 2 small avocados, peeled and chopped
  • 1 bunch coriander, finely chopped

For the sweetcorn salsa

  • ½ a 160g can sweetcorn
  • 200g cherry tomatoes, quartered
  • 1 red pepper, finely chopped
  • 2 green onions, thinly sliced
  • 3 sundried tomatoes, finely chopped
  • 400g can black beans
  • ½ tsp cumin
  • ½ tsp coriander
  • ½ tsp smoked paprika

For the bat-shaped nachos

  • 4 whole wheat tortillas
  • 1 ½ tsp oil
  • 4 purple carrots, cut into sticks

Directions

  • Start by making the guacamole. Pour the lime juice into a bowl and add the avocado. Mash well with a potato masher or the back of a fork until it’s the consistency you like. Add half of the chopped coriander, season to taste and spoon into a shallow bowl or serving dish.
  • Now mix all of the salsa ingredients together, along with the remaining chopped coriander. Season with salt and pepper. Arrange clumps of the salsa on top of the guacamole. This will allow you to get a bit of everything with each scoop. Cover and chill for up to 30 mins while you make the bat nachos.
  • Lay a tortilla wrap out on your chopping board and brush with a little of the oil. Cut out bats (or other spooky shapes) using a cookie cutter, scissors or both. Cut them as close together as possible to minimize waste. You should be able to get about 8 to 10 from each wrap, depending on the size of your cutter.
  • Heat oven to 375°F. Put all the tortilla shapes on 2 or 3 large baking sheets and bake for about 4 to 5 minutes or until golden and crisp, then serve with the carrot sticks, guacamole and salsa plate.

Tip: To add extra crunch and reduce food waste, finely shred the offcuts of tortilla and shallow fry until golden. Drain on paper towel and season with salt, then sprinkle over the salsa just before serving.

Spooky BOO-fallo mozzarella pizza with spider olives

Add a ghostly effect to your next homemade pizza that’s complete with creepy crawlies! This pizza recipe is easy and highly versatile. Add any of your favourite pizza toppings to make your ghost pizza tastier and spookier.

Yields: 6 slices

Ingredients

  • 1 pizza crust (store bought or homemade)
  • 1 jar marinara sauce (use 3/4 cup)
  • 8 oz. fresh buffalo mozzarella
  • 6 black olives
  • Handful of cheddar cheese
  • Any other toppings of your choice

Directions

  • Preheat the oven to 475°F.
  • Roll out the dough, and top with marinara sauce, spreading to the edges with a tiny margin.
  • Place the dough on a greased pizza pan or baking sheet, and bake until the dough is golden brown, 15 minutes. (Check toward the end to make sure it’s not too brown.)
  • Meanwhile, cut the buffalo mozzarella cheese into 1/4-inch thick slices using ghost-shaped cookie cutters.
  • Slice up one black olive into half-circles, and dice another up into 15 dot-sized pieces.
  • Once the crust is done, place the ghost-shaped cheese slices on top of the marinara.
  • Add 3 diced olives to each one for the eyes and mouth.
  • Arrange the 4 other olives around the pizza, and add the half-circle olive slices around them for the spider legs.
  • Put the pizza back in the oven, and let cook for 5 more minutes, or until cheese is melted. Enjoy!
